KOONTHAL VARUTHATHU

      INGREDIENTS
         Squid-1kg,coconut oil-3 table spoon,mustardseeds-1teaspoon,onion chopped-5,ginger chopped-2''piece,garlic chopped-5flakes,green chillies chopped-3, currry leaves-2sprigs, chilly powder-11/2table spoon,coriander powder-1table spoon,coconut grated-1/2, pepper powder-1/2teaspoon,garam masala-a pinch.
   FOR MARINATION
       Ginger crushed-2''piece,green chillies crushed-5,kudampuli-2,curry leaves-2sprigs,turmeric powder-1tsp,salt-to taste.
      HOW TO COOK
        Clean squid and slice into 1/4''sized rounds. Rub with salt .Wash and drain well.Apply the ingredients  for marination along with one tsp oil on the squid and keep aside for 1/2 an hour.Cook squid in sufficient water for 30-35min till the water evaporates .Splutter mustard seeds in oil and add onions, green chillies ,ginger, garlic,and curry leaves.Saute well till onions turn transparent.Add chilly powder and coriander powder and fry well.Add squid and saute well.Add grated coconut ,pepper powder, garam masala and salt to taste.

Transfer to a serving dish.

Kallummakai porichathu

Ingredients
 
Mussels-1kg,ginger crushed-2''pieces,green chilly crushed-7,kudampuli-2,curry leaves crushed-1sprig,turmeric powder-1/2 tsp,salt-to taste,coconut oil-3tbsp,mustard seeds-1tsp,onion big chopped-5,garlic chopped-5flakes,curry leaves -2sprig,chilly powder-1 1/2 tbsp,coriander powder-1tbsp,garam masala powder-1tsp.
HOW TO COOK
 Clean the mussels and drain well.Apply crushed1''pieceginger,4green chillies,kudampuli,crushed curry leaves,turmeric powder,and salt on the mussels and keep aside for 1/2 an hour.cook the mussels in sufficient water till the water evaporates.splutter mustard seeds in oil and chopped onions,ginger, green chillies,garlic and curry leaves.saute well.add chilly powderand coriander powder and saute for 2-3 minutes.add the mussels and little water. stir well.keep on at it till the mussels are well fried.add garam masala, mix well and remove from fire.

FISH MANJURIAN

        INGREDIENTS
             Boneless fish-500gms, soya sauce-1tbsp, cornflour-5tbsp, egg-1, salt-totaste, oil-deep frying, garlic minced-2tbsp, cellery-1tbsp, ginger-1/2tbsp, chilly minced-6,chilly sauce-1tbsp, soya sauce-1/2tsp,tomatoe sauce-1tbsp,spring onion minced-2tbsp, chicken stock-1/2cup,.pepper powder-1tsp.
       HOW TO COOK
          Clean the fish and cut into1/2''sq  pieces . Mix 1tbsp soya sauce,4tbsp cornflour,egg,and make a thick batter.put the fish pieces into it.deep fry to a light brown colour. remove and keep a side.Heat oil and stir fry all the minced  ingredients for one minute .add the fried fish pieces ,chilly sauce,soya sauce,tomatoe sauce,pepper powder,salt, and stock when it starts to boil add cornflour mixed in water and boil for one minute.remove from fire and sprinkle minced spring onion on top.serve hot.

Chicken manchurian

Ingredients
ch icken pieces -500gms, egg-1, soyasauce-1tbsp, salt-1/2tsp cornflour-2tbsp pepperpowder-3/4tsp,celeryminced-2tbsp, greenchilly-12,garlic-2tbsp, springonion minced-2tbsp chillysauce-1tbsp, tomatoesauce-1tbsp, chickenstock-1/2cup, salt-to taste,oil-little,redcolour-a pinch,

HOW  TO  COOK
Mix together 1tbsp soyasauce2tbsp cornflour, little salt and pepper powder.Put the chicken pieces in it and keep aside for one hour . heat oil and fry the chicken pieces . put oil in the pan and put all the minced ingredients and stir fry .now put the fried chicken pieces , remaining ingredients ,stock mixed with cornflour. when it thickens   off the fire.

Kadai Chicken

Ingredients

Chicken pieces - 500 gms,Tomato - 4 nos, Onion - 4 nos, Ginger - 1" piece,garlic 3 pots,Pepper - 1 tbsp,Coriander seeds - 1 tbsp,Red chillies- 12, Geera - 1/2 Tsp, Aniseeds - 1/2 tsp, Coriander leaves - 1 bunch,Green chillies - 6,Capsicum - 1,Oil - 1/4 cup .

How to Cook

Cut chicken into medium size pieces.Cube onions & tomatoes.Slit green chillies.Slice ginger and crush garlic and pepper.Heat oil saut onions,crushed garlic,ginger and green chillies.Add grounded coriander seeds,aniseeds,geera and red chillies.Add cube capsicum pieces.Saut tomatoes.Now add chicken and salt ,then the crushed pepper cones.Add enough oil and cook covered .Stir in between.When cooked sprinkle coriander leaves.

Cantonese Chicken

Contents
1) Chicken - 1 kg
2)Soya sauce - 4 tubes,Ginger - 50 gms, Onion - 50 gms ,Cellery -  10 gms,Pepper Powder - 1 Tsp,Salt - to taste ,Sugar - 1/2 tsp.
3)Spring Onion -  20 gms with stem 4" pieces not chopped.,Green chillies -  chopped 4 nos.,Capsicum - 2 nos, Corn flour dissolved in water - 2 tsp, vegetable oil - enough to Fry.
How to Cook
Mix all the ingredients given under 2 .Add 500 mlwater and chicken pieces ,cook for 15 minutes.Add spring onion & cook for 5 minutes.Remove chicken.
Heat Oil and fry chicken pieces till light brown.Heat another pan and pour 2 tsp oil.Saut chillies & capsicum.Pour stock and other ingredients in the stock.Boil.Add chicken pieces ,add cornflour ,mix in water and thicken.
