MURGH MASALA

INGREDIENTS
Chicken -1kg,onion-1/2kg,tomato-2,ginger-25gms, garlic-25gms,green chilly-25gms,chilly powder-1tsp,coriander powder-1tsp,turmeric powder-1/4tsp,garam masala-1/4tsp,aniseed-1/4tsp,dalda-150gms,cashew nut-50gms,cloves,cardamon,cinnamon-5gms.
HOW TO COOK
Heat dalda in a pan.add cardamon,cinnamon and,cloves.saute chopped onion,green chilly,ginger and garlic paste.add turmeric powder,chilly powder,coriander powder,garam masala and aniseed saute well.add tomato paste and chicken cook for15-20min.lastly add grounded cashewnut.serve hot.

TOMATOE FISH

INGREDIENTS
Fish-1/2kg,onion-2,garlic-6flakes,tomatoes-4,fish masala-2tbsp,lemon -1,sugar-a pinch,salt -to taste,coriander leaves-1sprig,oil-1/2 cup.
HOW TO COOK
Clean and cut fish into small pieces.marinate fish with salt and 1tbsp fish masala and keep aside for 1hr.heat pan add oil and shallow fry the fish.grind onion, garlic and tomatoes.heat oil in another pan saute the grounded ingredients and 1tbsp fish masala.add the fried fish and cook for few min till the gravy becomes thick.add lemon juice and a pinch of sugar. garnish with coriander leaves.

PRAWNS FRY

INGREDIENTS
Prawns-1kg,turmeric powder-1/4tsp,chilly powder-3tbsp,coriander powder-1tbsp,ginger-1"piece,garlic-5flakes,lemon-2,rice flour-2tbsp,egg-1,curry leaves-2sprigs,salt-to taste,oil-for deep frying.
HOW TO COOK
Clean prawns wash and drain well.make a batter with turmeric powder,chilly powder,coriander powder,ginger-garlic paste,lemon juice,rice flour,egg and curry leaves.marinate prawns for 1hr and deep fry.

MUTTON SOUP

INGREDIENTS
Mutton pieces-1kg,small onion-250gms,green chillies-2,ginger-garlic -1tsp,coriander-2tsp,turmeric powder-1/2tsp,pepper-11/2tsp,aniseed-1/2tsp,salt to taste,water-6cups,coriander leaves-1sprig.
HOW TO COOK
Grind small onion pepper,coriander,turmeric powder ,green chillies,ginger-garlic and aniseed.pressure cook these ingredients with mutton pieces ,salt and water.after 1 whistle slow fire for 30 min.now the soup is ready garnish with coriander leaves .

IRACHI PUTTU

INGREDIENTS
rice flour-1/2kg,salt -to taste,water-1/2litre,minced meat-1/4kg,turmeric powder-1/4tsp,chilly powder-1/2tsp,coriander powder-1tsp,garam masala-1/4tsp,onion chopped-2,ginger-garlic paste-1tsp,green chiilies-2,curry leaves-1sprig, coriander leaves-1sprig, salt -to taste,oil-1tbsp.
HOW TO COOK
lightly mix salt water in rice flour until the mixture resembles bread crumps.cook minced meat with turmeric powder,chilly powder, coriander powder,salt and little water.fry onions lightly in oil.add green chillies and ginger-garlic paste and saute for few min.add cookmeat, garam masala,coriander leaves and stir .boil water in puttu maker make puttu with alternate layers of 2tbspmeat and 1/2 cup puttu powder.allow to steam on the puttu maker for5 min.

FISH FINGER

INGREDIENTS
SEER FISH-8 FINGER PIECES,LEMON JUICE-5ML,SALT -TO TASTE,CURD-1TSP,GARLIC CHOPPED-1TSP,PEPPER POWDER-TO TASTE,MUSTARD POWDER-1PINCH,VEGETABLE OIL-5ML,BREAD CRUMPS-100GMS,EGG-1,MAIDA-5GMS,OIL-200ML.

         
HOW TO COOK      
   clean and cut fish into finger pieces.marinate fish with lemon juice,salt,curd,garlic ,pepper powder,mustard powder and vegetable oil.keep aside for 5 min.then dip in egg and then first cover in maida and then in bread crumps .deep fry in oil.

Mutton Kabab

Ingredients
Mutton -1kg,Onion 1/2 cup,Egg- 2nos,small onion 1 cup,cornflour gm,Green chilly 4 nos,pepper powder 1 Tsp,Pudeena leaves ,garam masala 1Tsp,Kadalaparippu 50 gm,Ginger 2 pcs,coriander leaves,salt to taste,oil for frying.
How to cook
Add garam masala,ginger,kadalaparippu,salt with mutton and pressure cook for few minutes.After 1/2 an hour add onion,egg,small onion,cornflour,green chilly,pepper powder pudeena leaves,cooriander leaves to the pressure cooked ingredients and make small balls and deep fry.
