DUM Mutton Biriyani - Muslim style

Ingredients

For Mutton masala
Mutton - 1kg,Onion- 300 gms ,garlic and ginger paste- 100 gm, Green chillies- 10,Khuskhus- 2 Tsp,curry leaves-coriander leaves-Mint leaves,curd - 1/2 cup,Oil- 3 tbsp,garam masala- 1 tsp,turmeric powder- 1/2 tsp,coriander powder - 1 tbsp, tomato- 2, salt to taste.

For Rice

Jeera rice - 1kg,Onion- 2,cardamom-5,cloves- 8,Fresh lime juice - 1tsp,cinnamon- 2"piece,ghee- 1/2 cup,Hop water - 1 1/2 L

For garnishing

Cashew nuts- 50 gms,Raisins - 50 gm,Onion finely sliced

How to cook


Preparing the masala


Chop mutton into biriyani piece ,wash and drain and keep aside.Grind green chillies,ginger and garlic. Saute onion in oil,till it turns transparent.Add ginger,garlic & green chillies and add ground khus khus,turmeric powder,coriander powder and saute well.Add mutton and fry for a few minutes.Add tomatoes,curd,curry leaves,salt and 1/2 a cup of water.Cook on a low flame and cover with a lid.When the mutton becomes half cooked, add coriander leaves and mint leaves.Cook until the mutton becomes tender and the water evaporates.Remove from fire and keep aside.Now the masala is ready.
Now fry finely sliced onion,cashew and raisins, in ghee and keep aside to cool.

Wash the rice and drain.Splutter clove,cinnamon and cardomom in ghee.Add sliced onion and saute well.Add rice and fry for 4-5 minutes.To this add hot water,lime juice and salt.cover and cook until rice becomes soft and water is absorbed.Stir occasionally.Remove from fire and keep aside when cooked.
Now put one layer of mutton masala in a deep vessel and sprinkle some garam masala on it.Follow this up with a layer of cooked rice,some garam masala,fried onion,cashew nut and raisins.Finish with two more layers,cover with a lid and cook with hot coals on the top part of vessel for 15 minutes.OR it can be baked in a hot oven for 15 minutes.

Now the DUM biriyani is ready to serve with garnished cashew nuts,raisins and Onions.
